I’m Sophia and I’m obsessed with pasta. At the age of two, I looked up at a waitress in a restaurant and ordered mussels over linguine in white sauce. She asked my parents if I just wanted chicken fingers. They told her I wanted mussels over linguine in white sauce.
Since then my obsession with noodles has manifested itself in a number of ways: in my college essay, which I wrote about making spaghetti and meatballs, in my choice of residence, in Boston’s historic Italian district, and now, in my obsession with fresh pasta.
I made Spaghetti Sophie because I was already making and documenting so much of my pasta process that I thought I should share it. I truly do hope you enjoy the recipes, and in true Italian fashion, I hope you stray a little from them.
